Description

These Egg and Sausage Breakfast Taquitos are the perfect way to start your day. Loaded with savory sausage, scrambled eggs, and melty cheese, all wrapped in a crispy tortilla, these taquitos are sure to satisfy your breakfast cravings!


Ingredients

  • 7 ounce box fully cooked sausage links

  • 5 large eggs

  • Salt and freshly ground black pepper, to taste

  • 1 1/2 cups shredded cheese (your favorite kind)

  • 10 white corn tortillas (or use 6” flour tortillas)


Instructions

  • Heat a pan over medium heat. Add the sausage links and cook until browned, following the instructions on the package. Once cooked, slice them into small pieces.

  • In a bowl, crack the eggs and beat them with a pinch of salt and freshly ground black pepper.

  • In the same pan, scramble the eggs until fully cooked, then remove from heat.

  • Heat the tortillas in a separate pan or microwave until soft and pliable.

  • Assemble the taquitos by placing a few spoonfuls of scrambled eggs, sausage, and shredded cheese in the center of each tortilla. Roll up tightly.

  • Optionally, heat a little oil in a pan and fry the taquitos until golden and crispy on all sides.

 

  • Serve with salsa, sour cream, or guacamole for dipping, if desired.

Notes

  • You can make these taquitos ahead of time and store them in the refrigerator for a quick breakfast on the go.

 

  • If you prefer a spicier kick, add some diced jalapeños or a dash of hot sauce to the filling.
