These Egg and Sausage Breakfast Taquitos are the perfect way to start your day. Loaded with savory sausage, scrambled eggs, and melty cheese, all wrapped in a crispy tortilla, these taquitos are sure to satisfy your breakfast cravings!
Ingredients

7 ounce box fully cooked sausage links

5 large eggs

Salt and freshly ground black pepper, to taste

1 1/2 cups shredded cheese (your favorite kind)

10 white corn tortillas (or use 6” flour tortillas)
Instructions

Heat a pan over medium heat. Add the sausage links and cook until browned, following the instructions on the package. Once cooked, slice them into small pieces.

In a bowl, crack the eggs and beat them with a pinch of salt and freshly ground black pepper.

In the same pan, scramble the eggs until fully cooked, then remove from heat.

Heat the tortillas in a separate pan or microwave until soft and pliable.

Assemble the taquitos by placing a few spoonfuls of scrambled eggs, sausage, and shredded cheese in the center of each tortilla. Roll up tightly.

Optionally, heat a little oil in a pan and fry the taquitos until golden and crispy on all sides.

Serve with salsa, sour cream, or guacamole for dipping, if desired.
