Description

Light, airy, and protein-packed, this fluffy cottage cheese cloud bread is a perfect low-carb, gluten-free alternative to traditional bread. Soft and mildly tangy, it works great for sandwiches or as a snack.


Ingredients

  • 3 large eggs, separated

  • ½ cup cottage cheese, blended until smooth

  • ¼ teaspoon cream of tartar

  • ½ teaspoon salt

  • 1 tablespoon cornstarch or arrowroot powder (optional, for structure)

  • 1 teaspoon honey or a pinch of sweetener (optional, for sweetness)


Instructions

  • Prepare the Ingredients
    Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. Separate the egg whites and yolks into two bowls.

  • Whip the Egg Whites
    Add cream of tartar to the egg whites. Using a hand or stand mixer, beat the egg whites on high speed until stiff peaks form.

  • Mix the Yolks and Cottage Cheese
    In the bowl with the egg yolks, add blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using). Mix until smooth.

  • Combine the Mixtures
    Gently fold the whipped egg whites into the yolk and cottage cheese mixture in thirds. Use a spatula and fold carefully to maintain as much air as possible for maximum fluffiness.

  • Shape the Cloud Bread
    Scoop the mixture onto the prepared baking sheet, forming 6–8 small rounds or larger pieces depending on your preference. Use the back of a spoon to shape them evenly.

 

  • Bake
    Bake in the preheated oven for 25–30 minutes or until golden brown and set. Remove from the oven and let cool completely on the baking sheet before serving.

Notes

Use room temperature eggs — they whip more easily and create better volume.

Don’t overfold — mix just until combined to avoid deflating the egg whites.

Bake immediately — the batter will lose volume if it sits too long, so bake right after shaping.
