  • 2 large Eggs
  • 1 cup Buttermilk
  • 1/2 cup Milk
  • 1/4 cup Vegetable Oil
  • 1 cup Cheddar Cheese, shredded
  • 1/2 cup Jalapeños, diced (fresh or pickled)
  • 1/4 cup Green Chilies, diced (optional)
  • 2 tablespoons Butter (for greasing the pan)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and grease a 9×9-inch square baking dish with butter or cooking spray.
  2. Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, salt, cumin, and chili powder.
  3. Combine Wet Ingredients: In another bowl, whisk together the eggs, buttermilk, milk, and vegetable oil until smooth.
  4. Combine: Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix!
  5. Add Cheese and Spices: Fold in the shredded cheddar cheese, jalapeños, and green chilies, if using.
  6. Bake: Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean and the top is golden brown.
  7. Serve: Let the cornbread cool slightly before slicing. Serve warm and enjoy!
