These Quick and Easy Breakfast Sliders are the perfect bite-sized breakfast or brunch treat! Loaded with fluffy scrambled eggs, savory breakfast sausage, and melty cheese, all tucked into soft slider buns. Simple to make and ideal for a crowd, these sliders are a delicious way to start the day!

  • 12 slider buns (or small sandwich rolls)
  • 6 large eggs
  • 1 tbsp butter
  • 8 oz breakfast sausage (pork or turkey)
  • 6 slices cheddar cheese (or cheese of choice)
  • Salt and pepper, to taste
  • 1 tbsp olive oil (for cooking)
  • Optional: Ketchup or hot sauce for serving

Instructions

  • Cook the sausage: Heat a skillet over medium heat and add the olive oil. Crumble the breakfast sausage into the skillet and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
  • Scramble the eggs: In a bowl, crack the eggs and whisk them together with a pinch of salt and pepper. In the same skillet, add butter and melt over medium heat. Pour the eggs into the skillet and scramble, cooking for 3-4 minutes until they are just set. Remove from heat.
  • Assemble the sliders: Slice the slider buns in half horizontally and lay the bottom halves in a baking dish. Layer the cooked sausage, scrambled eggs, and cheese slices on the bottom buns. Place the top halves of the buns on top.
  • Bake the sliders: Preheat the oven to 350°F (175°C). Place the assembled sliders in the oven and bake for 8-10 minutes, or until the cheese has melted and the buns are slightly golden.
  • Serve: Remove from the oven, slice the sliders, and serve hot with ketchup or hot sauce on the side if desired.

Notes

  • You can make these sliders ahead of time by assembling them the night before and baking them in the morning.
  • For extra flavor, you can add a little bit of Dijon mustard or honey mustard on the buns before assembling the sliders.
