  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes (optional, for a bit of heat)
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese (optional for topping)

 

  • 1 tbsp fresh parsley, chopped (optional for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • Prepare the chicken breasts: Place the chicken breasts on a cutting board. Use a sharp knife to create a pocket in each chicken breast by slicing horizontally through the thickest part, being careful not to cut all the way through.
  • Make the spinach filling: In a medium bowl, combine the chopped spinach, cream cheese, Parmesan cheese, garlic powder, crushed red pepper flakes (if using), and salt and pepper. Stir until the mixture is smooth and well combined.
  • Stuff the chicken: Carefully stuff each chicken breast with the spinach mixture, making sure to fill the pocket. If necessary, secure the opening with toothpicks to hold the filling in place.
  • Cook the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear each side for about 3-4 minutes, until golden brown.
  • Finish in the oven: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked through (internal temperature of 165°F/75°C).
  • Optional topping: If you like, sprinkle shredded mozzarella cheese on top of the chicken during the last 5 minutes of baking, allowing it to melt and become golden.
