Description

These fun and festive Grinch Pancakes are perfect for spreading holiday cheer! With their vibrant green color, soft fluffy texture, and a touch of sweet heart-shaped toppings, they’re sure to be a hit at your holiday breakfast table. Inspired by the beloved Grinch, this recipe will bring joy to your morning!

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • 1 ¼ cups milk
  • 2 tablespoons butter, melted
  • ½ teaspoon vanilla extract
  • ¼ teaspoon green food coloring (or more for a brighter green)
  • Whipped cream (for topping)
  • Red fruit (like strawberries or raspberries), cut into heart shapes (for topping)
  • Optional: chocolate chips or mini marshmallows (for extra decoration)

Instructions

  1. Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Prepare the wet ingredients: In another bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Stir in the green food coloring until you achieve the desired shade of green.
  3. Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix—it’s okay if the batter is a little lumpy.
  4. Cook the pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray. Pour ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, until bubbles form on the surface of the pancake and the edges start to look set. Flip the pancake and cook for another 1-2 minutes until golden brown.
  5. Serve: Stack the pancakes on plates, and top with a dollop of whipped cream, a few heart-shaped red fruit pieces, and any other toppings you’d like. Serve immediately and enjoy!

Notes

  • If you don’t want to use food coloring, you can substitute with spinach or matcha powder to naturally color the pancakes green.
  • For an even fluffier pancake, you can separate the egg whites and yolks, whisk the whites until stiff peaks form, and gently fold them into the batter at the end.
  • These pancakes are also fun for Christmas-themed breakfasts or brunches!
