Description

Buttery sugar cookie base topped with a rich almond paste filling, finished with a delicate white chocolate almond topping. These Almond Bars are a deliciously nutty and sweet treat perfect for any occasion.

Cookie Base:

  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix

  • 1/2 cup butter or margarine, melted

  • 1/2 teaspoon almond extract

  • 1 egg

Filling:

  • 1 can (8 oz) or 1 package (7 oz) almond paste, crumbled into 1/2-inch pieces

  • 1/4 cup sugar

  • 1/4 cup butter or margarine, melted

  • 2 eggs

  • 1/2 cup sliced almonds

Topping:

  • 2 oz white chocolate baking bar, coarsely chopped (about 1/3 cup)

  • 2 tablespoons shortening

  • 1/4 cup sliced almonds


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.

  2. In a medium bowl, mix cookie mix, melted butter, almond extract, and egg until well combined. Press evenly into the bottom of the prepared pan.

  3. In a separate bowl, beat almond paste and sugar until smooth. Add melted butter and eggs; beat until combined. Stir in sliced almonds.

  4. Spread filling evenly over cookie base.

  5. Bake for 30–35 minutes or until filling is set and edges are golden. Remove from oven and let cool completely.

  6. Meanwhile, melt white chocolate and shortening together until smooth (use microwave in 15-second bursts or double boiler).

  7. Drizzle melted white chocolate over cooled bars and sprinkle with remaining sliced almonds.

  8. Let chocolate set before cutting into bars.

Notes

Almond extract enhances the almond flavor but can be adjusted to taste.

For a dairy-free version, substitute with margarine and check chocolate for dairy content.

Store bars in an airtight container at room temperature or refrigerate.
