Ingredients

2 sticks unsalted butter, at room temperature

1 cup granulated sugar

1 cup golden brown sugar, firmly packed

3 large eggs

1 1/2 teaspoons pure vanilla extract

3 cups all-purpose flour

3/4 teaspoon baking soda

3/4 teaspoon salt

1 1/2 cups M&M’s (plus more for topping)

1 cup mini chocolate chips (plus more for topping)
Instructions

Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.

In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth and fluffy.

Beat in the eggs one at a time, then add the vanilla extract and mix until well combined.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the M&M’s and mini chocolate chips.

Spread the cookie dough evenly into the prepared baking pan.

Top with extra M&M’s and mini chocolate chips for extra color and sweetness.

Bake for 25-30 minutes or until the edges are golden brown, and a toothpick inserted into the center comes out clean.

Allow the bars to cool before cutting into squares.
Notes
You can use regular-sized M&M’s if you prefer, but mini M&M’s work well in the dough.
For a softer texture, slightly underbake the bars and let them cool in the pan.
These cookie bars can also be frozen for up to 2 months.
