These Easter Birds Nest Cookies are the perfect festive treat for springtime celebrations! With a crunchy base of chow mein noodles coated in milk chocolate and peanut butter chips, they’re shaped into adorable nests and topped with colorful chocolate or malted milk eggs. A fun, easy, and no-bake recipe that everyone will love!
Ingredients

1 ½ cups milk chocolate chips

⅔ cup peanut butter chips

4 cups fried chow mein noodles

1 (10-oz.) bag chocolate or malted milk eggs
Instructions

In a medium microwave-safe bowl, combine the milk chocolate chips and peanut butter chips. Microwave in 30-second intervals, stirring between each, until the chocolate and peanut butter chips are melted and smooth.

In a large mixing bowl, pour the melted chocolate mixture over the fried chow mein noodles. Gently stir until the noodles are evenly coated.

Using a spoon, scoop small amounts of the coated noodles and form them into “nests” on a parchment-lined baking sheet. Leave a small indentation in the center of each nest to resemble a bird’s nest.

Once all nests are formed, place them in the fridge to set for about 30 minutes.

After the nests have firmed up, gently press 2-3 chocolate or malted milk eggs into the center of each nest.

Store in an airtight container at room temperature or in the fridge for up to a week.
Notes
Be sure to use fried chow mein noodles (not uncooked) for the right texture
These cookies can be made ahead of time and stored for a few days
You can substitute the chocolate or malted milk eggs with jelly beans or any other small candy for a colorful twist!
