Description

This Easy Brown Sugar Peach Cake is a moist, fruity cake made with juicy peaches and topped with a rich brown sugar frosting. The perfect summer dessert, bursting with peach flavor and complemented by a smooth, caramel-like frosting.

Ingredients

Scale

For the Cake:

  • 15 oz yellow cake mix (Duncan Hines recommended)

  • 3 large eggs (or the amount specified by your cake mix)

  • 1/3 cup vegetable oil (or the amount specified by your cake mix)

  • 1/2 cup peach nectar or peach juice

  • 1 lb peeled and chopped peaches (about 3-4)

  • A drop of orange food coloring (optional)

For the Brown Sugar Frosting:

  • 1/2 cup unsalted butter, cut in pieces

  • 1/2 cup heavy cream

  • 1 cup packed brown sugar

  • 1 tsp vanilla extract

  • 2 1/2 cups confectioner’s sugar, sifted

Instructions

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan (9×9 or 9-inch round works well).

  2. In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and peach nectar (or peach juice). Mix according to the instructions on the cake mix box.

  3. Gently fold in the chopped peaches, ensuring they’re evenly distributed throughout the batter. If desired, add a drop of orange food coloring for a peachy tint.

  4. Pour the batter into the prepared cake pan and spread evenly.

  5. Bake according to the cake mix instructions (usually about 30-35 minutes), or until a toothpick inserted into the center comes out clean.

  6. Allow the cake to cool completely in the pan before frosting.

For the Brown Sugar Frosting:

  1. In a saucepan, combine the unsalted butter, heavy cream, and brown sugar. Cook over medium heat, stirring constantly, until the mixture comes to a gentle boil.

  2. Let the mixture boil for 2 minutes while stirring, then remove from heat and stir in the vanilla extract.

  3. Slowly whisk in the sifted confectioner’s sugar, 1/2 cup at a time, until the frosting is smooth and thick.

  4. Allow the frosting to cool slightly before spreading it over the cooled cake.

Notes

  • Make sure the cake is fully cooled before applying the frosting to prevent it from melting.

  • For extra flavor, add a pinch of cinnamon or nutmeg to the cake batter.
