Ingredients

Scale

For the French Toast Sticks:

  • 4 slices of thick bread (preferably brioche or challah)
  • 2 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 tbsp butter (for cooking)
  • 2 tbsp granulated sugar (for coating)

For the Berry Compote:

  • 1 cup mixed berries (strawberries, blueberries, raspberries, etc.)
  • 1 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1 tbsp water (optional, for thinning the compote)

Instructions

  1. Make the Berry Compote:

    • In a small saucepan, combine the mixed berries, honey (or maple syrup), and lemon juice. Cook over medium heat for 5-7 minutes, stirring occasionally, until the berries soften and begin to release their juices.
    • If the compote gets too thick, add a tablespoon of water to reach your desired consistency. Once done, remove from heat and set aside.
  2. Make the French Toast Sticks:

    • Cut each slice of bread into 3-4 sticks, depending on your desired size.
    • In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
    • Heat a large skillet or griddle over medium heat and melt the butter in it.
    • Dip each bread stick into the egg mixture, ensuring both sides are coated, and cook them on the skillet for 2-3 minutes per side, or until golden brown and crispy.
    • After cooking, immediately roll the French toast sticks in granulated sugar to coat.
  3. Serve:

    • Arrange the French toast sticks on plates and drizzle with the berry compote.
    • Serve warm with additional maple syrup, powdered sugar, or whipped cream if desired.

Notes

  • For a thicker compote, use frozen berries, as they release more juice during cooking.
  • Feel free to swap the berries in the compote for other fruits like peaches, apples, or cherries.
  • These French toast sticks are perfect for meal prep! Store them in the fridge for up to 2 days and reheat in the oven or microwave.
