Description

Soft, sweet, and gooey monkey bread made with fluffy dough balls rolled in cinnamon brown sugar and baked until golden. Drizzled with a simple glaze, this pull-apart treat is perfect for breakfast, brunch, or dessert.

For the pan:

  • 2 Tbsp softened butter

Dough:

  • 2 Tbsp melted butter

  • 1 cup warm milk (105–110°F)

  • ⅓ cup warm water (105–110°F)

  • ¼ cup (53 g) granulated sugar

  • 2¼ tsp instant yeast

  • 3¼ cups (462 g) all-purpose flour

  • 2 tsp salt

Brown Sugar Coating:

  • 1 cup (212 g) packed light brown sugar

  • 2 tsp ground cinnamon

  • ½ cup (113 g) butter, melted

Glaze:

  • 1 cup (114 g) confectioners’ sugar

  • 2 Tbsp milk


Instructions

  • Prepare the pan:

    • Grease a bundt or tube pan with 2 tablespoons softened butter.

  • Make the dough:

    • In a large bowl, combine warm milk, warm water, sugar, and yeast. Let sit 5 minutes until foamy.

    • Add melted butter, flour, and salt; mix until a soft dough forms. Knead until smooth and elastic (~5-7 min).

    • Cover and let rise in a warm place until doubled in size, about 1 hour.

  • Shape & coat:

    • Punch down dough; tear into small balls (~1-1.5 inch).

    • Mix brown sugar and cinnamon in a bowl.

    • Dip each dough ball in melted butter, then roll in cinnamon sugar. Layer in prepared pan.

  • Bake:

    • Cover and let rise 30 minutes.

    • Bake at 350°F (175°C) for 30–35 minutes or until golden brown and cooked through.

 

  • Glaze:

    • Whisk confectioners’ sugar and milk until smooth. Drizzle over warm monkey bread.

Notes

Serve warm for gooey pull-apart goodness.

For extra richness, add chopped nuts or raisins between layers.

Store leftovers covered at room temperature for up to 2 days.
