Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy (about 3-4 minutes).
  • Beat in the egg, vanilla extract, and almond extract (if using).
  • Gradually add the dry ingredients to the butter mixture and mix until combined.
  • Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar or colored sugar for a festive touch.
  • Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Gently flatten each ball with the bottom of a glass or your hand to form cookie discs.
  • Bake for 8-10 minutes or until the edges are slightly golden but the centers are still soft.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
