Description

This Greek Honey Cake is a delicious, moist dessert that combines the richness of Greek yogurt with the natural sweetness of honey. Perfect for any occasion, this cake is light yet satisfying, with a lovely golden hue and subtle honey flavor that will keep you coming back for more.

  • 2 cups (260g) plain flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp coarse salt

  • 1 cup (230ml) Greek yogurt

  • 1/4 cup (60ml) honey

  • 180g butter, at room temperature

  • 1 cup (225g) sugar

  • 3 eggs

  • 1 tsp vanilla bean paste or vanilla extract


Instructions

  • Preheat the oven to 350°F (175°C) and grease or line a 9-inch round cake pan with parchment paper.

  • Mix dry ingredients: In a medium bowl, whisk together the plain flour, baking powder, baking soda, and salt. Set aside.

  • Cream the butter and sugar: In a large bowl, beat together the softened butter and sugar using an electric mixer until light and fluffy, about 3-5 minutes.

  • Add the eggs: Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.

  • Add the wet ingredients: Stir in the Greek yogurt, honey, and vanilla extract (or vanilla bean paste). Mix until smooth.

  • Combine wet and dry ingredients: Gradually add the dry flour mixture to the wet ingredients, mixing gently until just combined. Do not overmix.

  • Bake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

 

  • Cool and Serve: Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Optionally, drizzle with additional honey for extra sweetness and a lovely sheen.

Notes

Honey: The flavor of honey will be prominent in this cake. You can use any variety of honey, but Greek honey (if available) will give it a truly authentic flavor.

Gluten-Free Option: You can substitute the plain flour with a gluten-free flour blend if needed, though results may vary slightly.

Toppings: Serve the cake with a dollop of whipped cream or a sprinkle of powdered sugar if desired.
