1 ½ cups all-purpose flour
-
½ cup unsalted butter (softened)

1 cup granulated sugar
-
2 large eggs
-
1 teaspoon vanilla extract
-
½ cup sour cream
-
1 cup crushed pineapple (drained)
For the Pineapple Glaze:
-
½ cup powdered sugar
-
2 tablespoons pineapple juice
Instructions
-
Prepare the Cake:
-
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
-
In a medium bowl, whisk together the flour, salt, and baking powder. Set aside.
-
In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3–4 minutes.
-
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
Add the sour cream and crushed pineapple to the butter mixture and mix until combined.
-
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
-
Pour the batter into the prepared cake pan and spread it evenly.
-
-
Bake the Cake:
-
Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
-
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
-
-
Prepare the Pineapple Glaze:
-
In a small bowl, whisk together the powdered sugar and pineapple juice until smooth and well combined.
-
Once the cake is cooled, drizzle the glaze over the top, allowing it to soak in slightly.
-
-
Serve:
-
Slice and serve! This cake is perfect on its own or paired with a scoop of vanilla ice cream or whipped cream.
-
Notes
Be sure to drain the crushed pineapple thoroughly to prevent the cake from becoming too wet.
If you prefer a stronger pineapple flavor, you can add more pineapple juice to the glaze.
This cake can be stored in an airtight container at room temperature for up to 3 days.
