For the Lemon Lavender Sugar:

  • 1/2 cup sugar

  • 1 tsp dry lavender, ground

  • 1/2 tbsp (5 g) lemon zest (about 1/2 lemon zested)

For the Lemon Lavender Cookies:

  • 2 1/2 cups (313 g) all-purpose flour (spooned and leveled)

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 1/4 cup (250 g) granulated white sugar

  • 1 cup (224 g) unsalted butter, softened

  • 1 egg

  • 1 tsp vanilla extract

  • 2 1/2 tbsp (25 g) lemon zest (about 2 1/2 lemons zested)

  • 1 tbsp (1 g) dry lavender, ground

For the Lemon Icing:

  • 1/2 cup (65 g) powdered sugar

  • 12 tsp lemon juice (adjust to desired consistency)


Instructions

  • Make the Lemon Lavender Sugar:

    • In a small bowl, combine 1/2 cup sugar with 1 tsp ground lavender and 1/2 tbsp lemon zest. Stir to combine, then set aside.

  • Prepare the Cookie Dough:

    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    • In a medium bowl, whisk together the flour, baking powder, and salt.

    • In a large bowl, cream the softened butter with 1 1/4 cup granulated sugar until light and fluffy.

    • Add the egg and vanilla extract, and continue mixing until smooth.

    • Gradually add the flour mixture to the wet ingredients, stirring until just combined.

    • Add 2 1/2 tbsp lemon zest and 1 tbsp ground lavender, mixing until fully incorporated.

  • Shape and Bake the Cookies:

    • Roll the dough into small balls, about 1 inch in diameter. Roll each dough ball in the prepared lemon lavender sugar to coat.

    • Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.

    • Gently flatten each cookie with the bottom of a glass or your palm.

    • Bake for 10-12 minutes, or until the edges are golden and the cookies are set.

    • Remove from the oven and let them cool on a wire rack.

  • Make the Lemon Icing:

    • In a small bowl, whisk together powdered sugar and lemon juice until smooth. Add more lemon juice if needed to reach the desired consistency.

    • Drizzle the icing over the cooled cookies.

Notes

Lavender: Be sure to use culinary-grade lavender for the best flavor. If you don’t have dried lavender, you can use a small amount of lavender extract (but be careful, as it’s quite concentrated).
