Ingredients
For the Lemon Lavender Sugar:

For the Lemon Lavender Cookies:

2 1/2 cups (313 g) all-purpose flour (spooned and leveled)

1 1/4 cup (250 g) granulated white sugar

1 cup (224 g) unsalted butter, softened

1 tsp vanilla extract

2 1/2 tbsp (25 g) lemon zest (about 2 1/2 lemons zested)

1 tbsp (1 g) dry lavender, ground
For the Lemon Icing:

1/2 cup (65 g) powdered sugar

1–2 tsp lemon juice (adjust to desired consistency)
Instructions

Make the Lemon Lavender Sugar:

In a small bowl, combine 1/2 cup sugar with 1 tsp ground lavender and 1/2 tbsp lemon zest. Stir to combine, then set aside.

Prepare the Cookie Dough:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream the softened butter with 1 1/4 cup granulated sugar until light and fluffy.

Add the egg and vanilla extract, and continue mixing until smooth.

Gradually add the flour mixture to the wet ingredients, stirring until just combined.

Add 2 1/2 tbsp lemon zest and 1 tbsp ground lavender, mixing until fully incorporated.
