Ingredients
-
1/2 cup unsalted butter
-
1 cup all-purpose flour
-
1 1/2 cups granulated sugar, divided
-
1 tablespoon baking powder
-
1/4 teaspoon salt
-
1 cup milk
-
1/4 cup lemon juice
-
Zest of 1 lemon
-
2 cups hot water
Instructions
-
Preheat the oven to 350°F (175°C).
-
Melt the butter in a 9×13-inch baking dish in the preheating oven.
-
In a mixing bowl, combine the flour, 1 cup of granulated sugar, baking powder, and salt.
-
Add the milk, lemon juice, and lemon zest to the dry ingredients and stir until smooth.
-
Pour the batter over the melted butter in the baking dish. Do not stir.
-
Sprinkle the remaining 1/2 cup of sugar over the top of the batter.
-
Carefully pour the hot water over the entire mixture (again, do not stir).
-
Bake for 45-50 minutes, or until the top is golden brown and the center is set.
-
Allow to cool slightly before serving. Serve warm for a gooey, custardy texture, or at room temperature for a firmer, cake-like texture.
Notes
-
For an extra zing, you can add more lemon zest or even a teaspoon of vanilla extract to the batter.
-
This dessert is best enjoyed fresh, but leftovers can be stored in the fridge and reheated for later.
