2/3 cup mayonnaise

2 1/2 lb russet potatoes, peeled and chopped (about 7 cups)
Instructions

Cook the Bacon:
In a skillet, cook the bacon over medium heat until crispy. Once cooked, remove the bacon from the skillet, and crumble it into small pieces. Set aside. -
Prepare the Potatoes:
Place the peeled and chopped potatoes into a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot. -
Make the Dressing:
In a small bowl, combine the mayonnaise, sour cream, kosher salt, and garlic powder. Stir until smooth. -
Assemble the Dish:
Add the mayo-sour cream dressing to the drained potatoes and mash them to your desired consistency. Fold in the crumbled bacon, sliced scallions, and shredded Cheddar cheese. -
Bake:
Preheat the oven to 350°F (175°C). Transfer the potato mixture to a greased baking dish and spread it evenly. Lightly spray the top with cooking spray. -
Bake for 20-25 minutes, or until the top is golden and bubbly.

Notes
Substitute for Sour Cream: You can substitute the sour cream with Greek yogurt for a slightly lighter version.
