Description

A creamy, savory potato dish with a delicious bacon and cheese topping. This comfort food is packed with flavor and perfect as a side dish for any meal or as a crowd-pleasing party dish.


Ingredients

  • 12 bacon slices

  • Cooking spray

  • 2/3 cup mayonnaise

  • 1/3 cup sour cream

  • 1 tsp kosher salt

  • 1 tsp garlic powder

  • 4 scallions, sliced

  • 8 oz shredded Cheddar cheese

  • 2 1/2 lb russet potatoes, peeled and chopped (about 7 cups)


Instructions

  • Cook the Bacon:
    In a skillet, cook the bacon over medium heat until crispy. Once cooked, remove the bacon from the skillet, and crumble it into small pieces. Set aside.

  • Prepare the Potatoes:
    Place the peeled and chopped potatoes into a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

  • Make the Dressing:
    In a small bowl, combine the mayonnaise, sour cream, kosher salt, and garlic powder. Stir until smooth.

  • Assemble the Dish:
    Add the mayo-sour cream dressing to the drained potatoes and mash them to your desired consistency. Fold in the crumbled bacon, sliced scallions, and shredded Cheddar cheese.

  • Bake:
    Preheat the oven to 350°F (175°C). Transfer the potato mixture to a greased baking dish and spread it evenly. Lightly spray the top with cooking spray.

  • Bake for 20-25 minutes, or until the top is golden and bubbly.

 

  • Serve:
    Garnish with additional scallions and bacon, if desired. Serve warm.

Notes

Substitute for Sour Cream: You can substitute the sour cream with Greek yogurt for a slightly lighter version.

Add Toppings: For extra flavor, you can sprinkle additional cheese on top before baking, or add a few dashes of hot sauce for a kick.
