Ingredients

1 ½ cups all purpose flour

¼ cup skim milk

¾ cup low fat Greek yogurt (1-2%)

¼ cup vegetable oil

2 eggs

1 teaspoon vanilla extract

¾ cup dark or semi-sweet chocolate chips
Instructions

Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.

In a large bowl, whisk together flour, sugar, baking powder, and salt.

In a separate bowl, combine milk, Greek yogurt, vegetable oil, eggs, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir gently just until combined (do not overmix). Fold in chocolate chips.

Divide the batter evenly among the muffin cups, filling about 2/3 full.

Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a lighter version, substitute half the oil with applesauce.
Add nuts or dried fruit for extra texture if desired.
