Description

These moist and tender muffins made with creamy Greek yogurt are the perfect balance of healthy and indulgent! Packed with rich dark chocolate chips and a hint of vanilla, they’re an easy, delicious treat for breakfast, snacks, or anytime you crave a satisfying muffin.


Ingredients

  • 1 ½ cups all purpose flour

  • ½ cup white sugar

  • 1 ½ teaspoons baking powder

  • ½ teaspoon salt

  • ¼ cup skim milk

  • ¾ cup low fat Greek yogurt (1-2%)

  • ¼ cup vegetable oil

  • 2 eggs

  • 1 teaspoon vanilla extract

  • ¾ cup dark or semi-sweet chocolate chips


Instructions

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.

  • In a large bowl, whisk together flour, sugar, baking powder, and salt.

  • In a separate bowl, combine milk, Greek yogurt, vegetable oil, eggs, and vanilla extract until smooth.

  • Pour the wet ingredients into the dry ingredients and stir gently just until combined (do not overmix). Fold in chocolate chips.

  • Divide the batter evenly among the muffin cups, filling about 2/3 full.

  • Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

 

  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a lighter version, substitute half the oil with applesauce.

Add nuts or dried fruit for extra texture if desired.

Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
