Ingredients
Crust:

2 packages (8 ounces each) cream cheese, room temperature

⅛ teaspoon kosher salt

1½ cups (357g) heavy cream, room temperature
Topping:

12-ounce can cherry pie filling
Instructions

Prepare crust: In a bowl, combine crushed graham crackers, sugar, and melted butter until mixture resembles wet sand. Press a layer of crust into the bottom of parfait glasses or serving jars.

Make cheesecake filling: Beat cream cheese and sugar until smooth and creamy. Add lemon juice, vanilla extract, and salt; mix well.

In a separate bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture until fully combined and fluffy.

Assemble parfaits: Spoon or pipe a layer of cheesecake filling over the crust in each glass. Add a layer of cherry pie filling on top. Repeat layers as desired, finishing with cherry topping.
