Description

This No-Bake Cheesecake Parfait is a layered dessert dream—featuring buttery graham cracker crumbs, fluffy cheesecake filling, and sweet cherry pie topping. Elegant enough for entertaining, but easy enough for weeknights!

For the Crust Layer

  • 2 cups (about 1416 sheets / 168g) honey graham crackers, finely crushed

  • 1 tablespoon granulated sugar

  • ½ cup (113g) unsalted butter, melted

For the Cheesecake Filling

  • 2 (8 oz) packages cream cheese, room temperature

  • ¾ cup (150g) granulated sugar

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon vanilla extract

  • ⅛ teaspoon kosher salt

  • 1½ cups (357g) heavy cream, room temperature

For the Topping

  • 1 (12 oz) can cherry pie filling


Instructions

  1. Make the crust mixture:
    In a bowl, combine crushed graham crackers, sugar, and melted butter. Stir until the texture resembles wet sand. Set aside.

  2. Prepare the cheesecake filling:
    In a large mixing bowl, beat cream cheese until smooth and creamy. Add sugar, lemon juice, vanilla, and salt. Mix until fully combined.
    In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.

  3. Assemble the parfaits:
    In serving glasses or jars, layer crust mixture, followed by cheesecake filling, and then a spoonful of cherry pie filling. Repeat layers if desired.

  4. Chill & serve:
    Refrigerate for at least 2 hours (or overnight) before serving for best texture. Garnish with extra graham cracker crumbs or whipped cream if desired.

Notes

You can substitute other pie fillings (blueberry, strawberry, etc.) for variation.

For individual portions, use mason jars, dessert glasses, or mini cups.

To make ahead, store assembled parfaits covered in the fridge for up to 3 days.
