- 1/2 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 2 teaspoons vanilla extract
- 3 cups quick oats (or old-fashioned oats, if preferred)
Instructions
- In a medium saucepan, melt the butter over medium heat.
- Once the butter is melted, add the sugar, milk, and cocoa powder. Stir to combine and bring the mixture to a boil.
- Let it boil for 1-2 minutes, stirring constantly, then remove from the heat.
- Stir in the peanut butter and vanilla extract until the peanut butter is completely melted and the mixture is smooth.
- Add the oats and stir until fully combined.
- Drop spoonfuls of the cookie mixture onto a sheet of wax paper or parchment paper, spreading them out to your desired size.
- Let the cookies cool and set at room temperature for about 30-45 minutes, or until firm.
Notes
- If you want a firmer texture, refrigerate the cookies for 10-15 minutes after they cool to room temperature.
- For a twist, you can add chopped nuts, chocolate chips, or coconut flakes to the mixture before scooping.
- Be sure not to overcook the sugar mixture, or the cookies may turn out too hard.
