Ingredients
Scale
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 1/4 tsp ground cinnamon (optional)
- For the Cheesecake Filling:
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1/2 cup eggnog (store-bought or homemade)
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg (or to taste)
- 1 1/2 cups heavy whipping cream
- 1/4 cup granulated sugar (for whipping cream)
- For the Berry Topping:
- 1 cup fresh mixed berries (such as raspberries, strawberries, and blueberries)
- 1 tbsp honey or maple syrup (optional, for sweetening berries)
Instructions
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and ground cinnamon (if using).
- Stir until the mixture is well combined and resembles wet sand.
- Spoon the crust mixture into the bottom of individual cheesecake cups or a muffin tin lined with cupcake liners. Press down gently to form an even crust layer.
- Place the crusts in the refrigerator to chill while you prepare the filling.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese with powdered sugar, eggnog, vanilla extract, and ground nutmeg until smooth and creamy.
- In a separate bowl, whip the heavy cream with granulated sugar until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined, being careful not to deflate the whipped cream.
- Assemble the Cheesecakes:
- Spoon the cheesecake filling over the chilled crusts, dividing it evenly among the cups.
- Smooth the top with a spatula and refrigerate the cheesecakes for at least 4 hours or overnight to allow them to set.
- Prepare the Berry Topping:
- While the cheesecakes are chilling, wash and dry the fresh berries. If using strawberries, slice them into smaller pieces.
- Drizzle the berries with honey or maple syrup if you prefer a touch of sweetness, then toss them gently to coat.
- Serve:
- Before serving, top each cheesecake with a generous amount of the berry topping.
- Optionally, garnish with a light sprinkle of additional nutmeg or cinnamon for extra flavor and decoration.
Notes
- These cheesecakes can be made in individual servings for easy portion control, or you can prepare one large cheesecake and slice it into servings.
- If you don’t have individual cups, a 9-inch springform pan can also be used. Just adjust the chilling time as needed.
- You can use any berries you like, or even add a drizzle of caramel or chocolate sauce for a twist on the topping.
