These no-bake Pecan Pie Balls are a bite-sized twist on the classic Southern dessert! Sweet, nutty, and dipped in rich chocolate, they combine the flavors of pecan pie with the ease of a truffle. 1 cup light brown sugar

1 cup graham cracker crumbs (use Honey Graham Crackers for best flavor)

2 tablespoons unsalted butter, melted

1/4 cup maple syrup (preferably real maple syrup)

1/2 teaspoon rum extract

2 tablespoons light corn syrup

10 ounces semi-sweet chocolate baking bars, chopped (for coating)
Instructions

In a large bowl, combine brown sugar, graham cracker crumbs, finely chopped pecans, and salt.

Stir in the melted butter, maple syrup, rum extract, and corn syrup. Mix until fully incorporated and the mixture holds together when pressed.

Roll the mixture into 1-inch balls and place on a baking sheet lined with parchment paper.

Freeze the balls for at least 30 minutes to firm up.

Meanwhile, melt the semi-sweet chocolate in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.

Dip each chilled pecan ball into the melted chocolate, allowing excess to drip off. Place back on the parchment paper.

Refrigerate for 15–20 minutes or until the chocolate has fully set.

Store in an airtight container in the fridge for up to 2 weeks.
Notes
You can toast the pecans beforehand for added flavor.
For a boozy adult version, substitute real rum for the rum extract.
