Description

These rich and creamy Peanut Butter Truffles are a decadent no-bake treat! With a smooth peanut butter center coated in silky semi-sweet chocolate, they’re perfect for holiday trays, gifts, or anytime you crave a sweet bite-sized indulgence.

For the Peanut Butter Filling

  • 6 tablespoons (85g) unsalted butter, softened to room temperature

  • 1 cup (250g) creamy peanut butter (not natural style)

  • 2½ cups (300g) confectioners’ sugar

  • ½ teaspoon pure vanilla extract

  • ⅛ teaspoon salt

For the Chocolate Coating

  • 12 ounces (339g) semi-sweet chocolate bars, coarsely chopped (about three 4 oz bars)

  • 1 teaspoon vegetable oil (for smoother dipping)

Optional Garnish

  • Sprinkles, crushed peanuts, or flaky sea salt


Instructions

  • Make the peanut butter mixture:
    In a large bowl, use a hand or stand mixer to beat the butter and peanut butter together until smooth. Add vanilla and salt, then gradually mix in the confectioners’ sugar until a thick dough forms.

  • Shape the truffles:
    Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill in the refrigerator or freezer for at least 30 minutes, or until firm.

  • Melt the chocolate:
    In a microwave-safe bowl or using a double boiler, melt the chopped chocolate with the vegetable oil, stirring until smooth.

  • Dip the truffles:
    Using a fork or dipping tool, dip each chilled peanut butter ball into the melted chocolate. Tap off the excess and return to the parchment-lined tray.

 

  • Decorate and set:
    Immediately add sprinkles or toppings if using. Allow chocolate to set at room temperature or speed up by refrigerating for 15–20 minutes.

Notes

Avoid natural peanut butter—it separates and will affect the texture.

Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer storage
