Description
A sweet, spicy, and tangy condiment made with fresh pineapple and jalapeños simmered in a zesty syrup. Perfect as a topping for tacos, burgers, sandwiches, or as a bold addition to charcuterie boards.
Ingredients

3 cups diced fresh pineapple

1 cup thinly sliced jalapeño peppers

1 cup apple cider vinegar

2 cups granulated sugar

2 tablespoons lemon juice
Instructions

In a medium saucepan, combine apple cider vinegar, sugar, and lemon juice. Bring to a simmer over medium heat, stirring until the sugar dissolves completely.

Add diced pineapple and sliced jalapeños to the pot. Simmer gently for 10–15 minutes until the jalapeños soften and the syrup thickens slightly.

Using a slotted spoon, transfer the pineapple and jalapeños into sterilized jars.

Pour the hot syrup over the mixture, leaving about ½ inch of headspace.

Seal jars with lids and let cool completely before refrigerating.

For best flavor, allow to chill for at least 24 hours before using.
Notes
Adjust the number of jalapeños to control heat level.
Keeps well refrigerated for up to 3 weeks.
