  • Author: Norah
  • Total Time: 25 minutes
  • Yield: About 23 cups 1x
  • Diet: Vegan

Description

A sweet, spicy, and tangy condiment made with fresh pineapple and jalapeños simmered in a zesty syrup. Perfect as a topping for tacos, burgers, sandwiches, or as a bold addition to charcuterie boards.

Ingredients

Scale
  • 3 cups diced fresh pineapple

  • 1 cup thinly sliced jalapeño peppers

  • 1 cup apple cider vinegar

  • 2 cups granulated sugar

  • 2 tablespoons lemon juice

Instructions

  • In a medium saucepan, combine apple cider vinegar, sugar, and lemon juice. Bring to a simmer over medium heat, stirring until the sugar dissolves completely.

  • Add diced pineapple and sliced jalapeños to the pot. Simmer gently for 10–15 minutes until the jalapeños soften and the syrup thickens slightly.

  • Using a slotted spoon, transfer the pineapple and jalapeños into sterilized jars.

  • Pour the hot syrup over the mixture, leaving about ½ inch of headspace.

  • Seal jars with lids and let cool completely before refrigerating.

  • For best flavor, allow to chill for at least 24 hours before using.

Notes

Adjust the number of jalapeños to control heat level.

Keeps well refrigerated for up to 3 weeks.

For long-term storage, follow proper canning procedures.
