For the cheesecake mousse:
- 250 grams cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- ½ cup sour cream
- A pinch of salt
For the raspberry swirl:
- 1 cup fresh raspberries (or frozen, thawed)
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
Instructions
- Make the raspberry swirl:
- In a small saucepan, combine the raspberries, sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens (about 5-7 minutes).
- Remove from heat and let it cool to room temperature. Once cooled, you can strain the mixture to remove the seeds, or leave them in for texture.
- Prepare the cheesecake mousse:
- In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
- In a separate bowl, beat the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture. Add the sour cream and a pinch of salt, and fold again until well combined.
- Assemble the mousse:
- Spoon the cheesecake mousse into serving dishes or glasses.
- Drizzle the cooled raspberry swirl over the top of the mousse and swirl gently with a toothpick or skewer for a marbled effect.
- Chill the mousse:
- Refrigerate the mousse for at least 2 hours to allow it to set and chill.
- Serve:
- Serve the mousse chilled, optionally garnished with fresh raspberries, a mint leaf, or a sprinkle of crushed graham crackers for added texture.
Notes
- For a smoother raspberry swirl, you can blend the raspberries before cooking.
- If you want a sweeter mousse, you can add more powdered sugar to the cream cheese mixture to taste.
