Description

These soft, fluffy raspberry cinnamon rolls are infused with warm cinnamon and sweet raspberries, topped off with a zesty lemon glaze. Perfect for breakfast or dessert, they’ll bring a burst of fresh flavor to your morning.

  • Dough:

    • 4 cups all-purpose flour

    • 1/4 cup granulated sugar

    • 2 teaspoons instant yeast

    • 1 teaspoon salt

    • 1 1/4 cups milk, lukewarm

    • 1/4 cup + 1 tablespoon unsalted butter, melted

    • 1 tablespoon vegetable oil

    • 2 large eggs

  • Raspberry Filling:

    • 1/2 cup granulated sugar

    • 2 teaspoons ground cinnamon

    • 1 cup fresh raspberries, finely chopped or minced

  • Lemon Glaze:

    • 1 cup powdered sugar

    • 1 tablespoon fresh lemon juice

    • Zest of 1 lemon

    • 1/2 teaspoon vanilla extract


Instructions

  • Make the dough:

    • In a large mixing bowl, combine flour, sugar, yeast, and salt. Add the lukewarm milk, melted butter, vegetable oil, and eggs. Mix until dough forms.

    • Knead the dough for about 5-7 minutes until smooth and elastic. Cover and let it rise in a warm place for about 1-1.5 hours or until doubled in size.

  • Prepare the filling:

    • In a small bowl, mix together the sugar, cinnamon, and finely chopped raspberries. Set aside.

  • Assemble the rolls:

    • Preheat your oven to 375°F (190°C).

    • Roll the dough out onto a lightly floured surface into a rectangle about 12×18 inches.

    • Spread the raspberry cinnamon filling evenly over the dough, leaving a small border at the edges.

    • Roll the dough up tightly and cut into 12 equal slices.

    • Place the rolls into a greased baking dish and cover. Let them rise for another 30 minutes.

  • Bake the rolls:

    • Bake the rolls in the preheated oven for 18-22 minutes or until golden brown on top.

  • Make the glaze:

    • While the rolls bake, whisk together the powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.

 

  • Serve:

    • Once the rolls are done, drizzle the lemon glaze over the warm rolls. Serve immediately and enjoy!

Notes

The rolls are best enjoyed fresh but can be stored in an airtight container for up to 2 days.

You can also freeze the unbaked rolls before the final rise. When ready to bake, let them thaw in the fridge overnight and then bake as directed.
