Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Gently fold in the crushed Red Hots and mini chocolate chips (if using).
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges of the cookies are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
