Creamy, minty, and boozy — these Shamrock Shake Pudding Cups are the ultimate adults-only treat for St. Patrick’s Day or any festive gathering! Made with vanilla pudding, creme de menthe, vodka, and topped with whipped cream and a cherry, they’re fun, flavorful, and incredibly easy to serve in mini cups.
Ingredients

1 (3 oz) box instant vanilla pudding

1 ½ cups cold milk

1 teaspoon vanilla extract

½ cup whipped vodka or vanilla vodka

¼ cup crème de menthe (green)

1 (8 oz) tub Cool Whip, thawed

1–2 drops green food coloring

Whipped cream, for garnish

Maraschino cherries, for garnish

12 (2 oz) plastic soufflé cups with lids
Instructions

Make the pudding base:

In a large mixing bowl, whisk together the vanilla pudding mix, cold milk, and vanilla extract until smooth and slightly thickened (about 2 minutes).

Add alcohol:

Stir in the vodka and crème de menthe until fully combined.

Make it fluffy and green:

Gently fold in the thawed Cool Whip and 1–2 drops of green food coloring until evenly mixed and light green in color.

Assemble:

Spoon or pipe the mixture into 2 oz plastic soufflé cups, filling each about ¾ full.

Cover with lids and refrigerate for at least 1 hour to set.

Garnish before serving:

Top each pudding cup with a swirl of whipped cream and a maraschino cherry.

Notes
To make a non-alcoholic version, omit the vodka and crème de menthe, and use peppermint extract and a little extra milk instead.
Best served chilled!
