Description

A fun and festive adults-only dessert perfect for St. Patrick’s Day or any party. These creamy, minty pudding cups combine vanilla pudding, whipped topping, and a kick of vodka and crème de menthe, served in mini cups for the perfect boozy bite.


Ingredients

  • 12 (2 oz) plastic soufflé cups with lids

  • 1 (3 oz) box instant vanilla pudding

  • 1 ½ cups cold milk

  • 1 teaspoon vanilla extract

  • ½ cup whipped or vanilla vodka

  • ¼ cup crème de menthe

  • 1 (8 oz) tub Cool Whip, thawed

  • 12 drops green food coloring

  • Whipped cream, for garnish

  • Maraschino cherries, for garnish


Instructions

  • In a medium mixing bowl, whisk together the pudding mix, cold milk, and vanilla extract until thickened.

  • Stir in the vodka and crème de menthe until smooth.

  • Fold in the Cool Whip and green food coloring until evenly combined and a light green color is achieved.

  • Spoon mixture into the soufflé cups, filling each almost to the top.

  • Cover with lids and refrigerate for at least 4 hours or overnight until set.

 

  • Before serving, top each with a swirl of whipped cream and a maraschino cherry.

Notes

You can adjust the crème de menthe for a stronger mint flavor.

For a non-alcoholic version, substitute vodka and crème de menthe with mint extract and a splash of milk.

Store in the refrigerator for up to 3 days before serving.
