A fun and festive adults-only dessert perfect for St. Patrick’s Day or any party. These creamy, minty pudding cups combine vanilla pudding, whipped topping, and a kick of vodka and crème de menthe, served in mini cups for the perfect boozy bite.
Ingredients

12 (2 oz) plastic soufflé cups with lids

1 (3 oz) box instant vanilla pudding

1 ½ cups cold milk

1 teaspoon vanilla extract

½ cup whipped or vanilla vodka

¼ cup crème de menthe

1 (8 oz) tub Cool Whip, thawed

1–2 drops green food coloring

Whipped cream, for garnish

Maraschino cherries, for garnish
Instructions

In a medium mixing bowl, whisk together the pudding mix, cold milk, and vanilla extract until thickened.

Stir in the vodka and crème de menthe until smooth.

Fold in the Cool Whip and green food coloring until evenly combined and a light green color is achieved.

Spoon mixture into the soufflé cups, filling each almost to the top.

Cover with lids and refrigerate for at least 4 hours or overnight until set.

Before serving, top each with a swirl of whipped cream and a maraschino cherry.
Notes
You can adjust the crème de menthe for a stronger mint flavor.
For a non-alcoholic version, substitute vodka and crème de menthe with mint extract and a splash of milk.
Store in the refrigerator for up to 3 days before serving.
