Instructions

Wash strawberries and gently pat dry. Slice off the stems and hollow out the center of each berry using a small knife or melon baller. -
Make cheesecake filling:
In a small bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth and creamy. -
Fill strawberries:
Spoon or pipe the cheesecake filling into the hollowed strawberries. -
Top with crumbs:
Sprinkle graham cracker crumbs over the filled strawberries for a “crust” topping.
