For the Cookies:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder (for the chocolate flavor)
  • 1/4 cup powdered sugar (for rolling)

For the Strawberry Jam Filling:

  • 1/2 cup strawberry jam (or preserve)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, salt, and cocoa powder.
  • In a separate large bowl, beat together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  • Add the egg yolk and vanilla extract to the butter mixture, and beat until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll the dough into 1-inch balls, and then roll each ball in powdered sugar until coated.
  • Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Gently press your thumb into the center of each dough ball to create an indentation. Be sure not to press all the way through.
  • Bake the cookies for 10-12 minutes, or until they are slightly firm around the edges. The cookies will slightly crack around the edges, which is normal.
  • After baking, remove the cookies from the oven and allow them to cool for 5 minutes on the baking sheet.
  • Once the cookies have cooled slightly, use a spoon to fill each thumbprint indentation with strawberry jam. You can warm the jam slightly in the microwave if it’s too thick.
  • Let the cookies cool completely before serving or storing.

Notes

  • You can substitute the strawberry jam with other fruit jams, such as raspberry, blueberry, or even apricot for a different flavor.
  • If you want to make the cookies even more decadent, dip the edges of the cookies in melted chocolate after filling with the jam.
