Description
This creamy and light strawberry mousse is perfect for any occasion. Made with fresh strawberries, cream cheese (or coconut cream), and a touch of sweetness, it’s a simple yet indulgent treat. It’s easy to prepare and thickens beautifully as it chills, making it a great make-ahead dessert!
Ingredients
- 8 oz cream cheese (or coconut cream)
- 4 oz yogurt (or additional cream cheese or coconut cream)
- 1 cup powdered sugar (or sugar-free alternative)
- 5 medium-sized strawberries
- Optional: ¼ teaspoon vanilla bean paste
Instructions
-
If using cream cheese, let it come to room temperature. If using coconut cream, open the can and make sure the contents are thick and creamy. If you encounter a can of coconut cream that is hard and flaky, it may not work well for the mousse.
-
Remove the stems from the strawberries and blend or mash them until pureed.
-
Add all remaining ingredients (cream cheese or coconut cream, yogurt, powdered sugar, and vanilla bean paste, if using) to the blender or food processor. Blend until completely smooth, or use a hand mixer.
-
Transfer the mousse to serving dishes and refrigerate. The mousse will thicken considerably as it chills, so be sure to allow at least 2 hours in the fridge for the best texture.
Notes
- This mousse can be made dairy-free by using coconut cream and coconut yogurt or a plant-based alternative.
- You can adjust the sweetness by adding more or less powdered sugar, or use a sugar-free sweetener if preferred.
- For a fun variation, top the mousse with extra strawberries, whipped cream, or a drizzle of chocolate!
