  • Author: Norah
  • Total Time: 2 hours 10 minutes
  • Yield: 4 servings 1x
  • Diet: Gluten Free

Description

This creamy and light strawberry mousse is perfect for any occasion. Made with fresh strawberries, cream cheese (or coconut cream), and a touch of sweetness, it’s a simple yet indulgent treat. It’s easy to prepare and thickens beautifully as it chills, making it a great make-ahead dessert!

Ingredients

Scale
  • 8 oz cream cheese (or coconut cream)
  • 4 oz yogurt (or additional cream cheese or coconut cream)
  • 1 cup powdered sugar (or sugar-free alternative)
  • 5 medium-sized strawberries
  • Optional: ¼ teaspoon vanilla bean paste

Instructions

  1. If using cream cheese, let it come to room temperature. If using coconut cream, open the can and make sure the contents are thick and creamy. If you encounter a can of coconut cream that is hard and flaky, it may not work well for the mousse.

  2. Remove the stems from the strawberries and blend or mash them until pureed.

  3. Add all remaining ingredients (cream cheese or coconut cream, yogurt, powdered sugar, and vanilla bean paste, if using) to the blender or food processor. Blend until completely smooth, or use a hand mixer.

  4. Transfer the mousse to serving dishes and refrigerate. The mousse will thicken considerably as it chills, so be sure to allow at least 2 hours in the fridge for the best texture.

Notes

  • This mousse can be made dairy-free by using coconut cream and coconut yogurt or a plant-based alternative.
  • You can adjust the sweetness by adding more or less powdered sugar, or use a sugar-free sweetener if preferred.
  • For a fun variation, top the mousse with extra strawberries, whipped cream, or a drizzle of chocolate!
