Description

These Strawberry Oatmeal Crumble Bars are the perfect blend of buttery oat crust and fresh, juicy strawberries. Sweet, tangy, and crumbly, they make a wholesome snack, breakfast treat, or light dessert—easy to bake and even easier to love!

For the Crust & Crumble

  • ¾ cup (95g) all-purpose flour

  • 1 cup (100g) rolled oats

  • ½ cup (100g) light brown sugar

  • ½ teaspoon (2g) baking powder

  • ¼ teaspoon (1g) salt

  • ½ cup (113g) unsalted butter, at room temperature

  • 1 teaspoon (5g) vanilla extract

For the Strawberry Filling

  • 10 oz (300g) fresh strawberries, hulled and chopped

  • 2 tablespoons (30g) granulated sugar

  • 1 tablespoon (8g) cornstarch

  • Zest of 1 lemon


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch (20x20cm) baking pan with parchment paper.

  2. Make the crust/crumble base: In a medium bowl, combine flour, oats, brown sugar, baking powder, and salt. Add butter and vanilla. Mix until crumbly and well-combined.

  3. Press & reserve: Press about ¾ of the mixture into the bottom of the prepared pan to form a firm crust. Reserve the rest for the topping.

  4. Prepare the filling: In another bowl, mix chopped strawberries, sugar, cornstarch, and lemon zest until coated evenly.

  5. Assemble the bars: Spread the strawberry mixture evenly over the crust. Crumble the reserved oat mixture on top.

  6. Bake for 30–35 minutes, or until golden brown on top and the filling is bubbly.

  7. Cool completely before cutting into bars. Store in the fridge for up to 5 days.

Notes

You can use frozen strawberries (thawed and drained) if fresh aren’t available.

Add a pinch of cinnamon to the crust for a warm twist.

Bars freeze well—wrap tightly and freeze for up to 2 months.
