For the Crust & Crumble
-
¾ cup (95g) all-purpose flour
-
1 cup (100g) rolled oats
-
½ cup (100g) light brown sugar
-
½ teaspoon (2g) baking powder
-
¼ teaspoon (1g) salt
-
½ cup (113g) unsalted butter, at room temperature
-
1 teaspoon (5g) vanilla extract
For the Strawberry Filling
-
10 oz (300g) fresh strawberries, hulled and chopped
-
2 tablespoons (30g) granulated sugar
-
1 tablespoon (8g) cornstarch
-
Zest of 1 lemon
Instructions
-
Preheat oven to 350°F (175°C). Line an 8×8-inch (20x20cm) baking pan with parchment paper.
-
Make the crust/crumble base: In a medium bowl, combine flour, oats, brown sugar, baking powder, and salt. Add butter and vanilla. Mix until crumbly and well-combined.
-
Press & reserve: Press about ¾ of the mixture into the bottom of the prepared pan to form a firm crust. Reserve the rest for the topping.
-
Prepare the filling: In another bowl, mix chopped strawberries, sugar, cornstarch, and lemon zest until coated evenly.
-
Assemble the bars: Spread the strawberry mixture evenly over the crust. Crumble the reserved oat mixture on top.
-
Bake for 30–35 minutes, or until golden brown on top and the filling is bubbly.
-
Cool completely before cutting into bars. Store in the fridge for up to 5 days.
Notes
You can use frozen strawberries (thawed and drained) if fresh aren’t available.
Add a pinch of cinnamon to the crust for a warm twist.
Bars freeze well—wrap tightly and freeze for up to 2 months.
