Ingredients
Scale
For the Cookie Base:
- 1 cup unsalted butter, softened
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Cheesecake Topping:
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 cup strawberry jam or fresh strawberries, finely chopped
- 1 tablespoon all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Make the Cookie Base:
- In a large bowl, beat together the butter and sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until combined.
- In a separate bowl, whisk the flour, baking soda, and salt together. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Form the Cookies:
- Scoop tablespoon-sized portions of the cookie dough and roll them into balls. Place them on the prepared baking sheets about 2 inches apart.
- Gently flatten each ball into a small disc using the back of a spoon or your fingers.
- Make the Cheesecake Topping:
- In a medium bowl, beat the softened cream cheese until smooth.
- Add the sugar, egg yolk, and vanilla extract, beating until fully combined.
- Stir in the strawberry jam (or chopped strawberries) and flour until the mixture is smooth.
- Assemble the Cookies:
- Spoon about a teaspoon of the cheesecake mixture onto the center of each cookie.
- Gently spread the topping to cover the cookie base, leaving a small border around the edges.
- Bake:
- Bake for 12-15 minutes or until the cookie edges are golden and the cheesecake topping is set.
- Let the cookies cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
Notes
- If using fresh strawberries, chop them finely to avoid excess moisture in the topping.
- You can substitute strawberry jam with other fruit preserves like raspberry or blueberry for a different twist.
- These cookies can be stored in an airtight container in the fridge for up to 3 days.
