The combination of rich cream cheese and sweet strawberries creates a melt-in-your-mouth experience.

Ingredients

Scale

For the Cookie Base:

  • 1 cup unsalted butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Cheesecake Topping:

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam or fresh strawberries, finely chopped
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Make the Cookie Base:
    • In a large bowl, beat together the butter and sugar until light and fluffy.
    • Add in the egg and vanilla extract, mixing until combined.
    • In a separate bowl, whisk the flour, baking soda, and salt together. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  3. Form the Cookies:
    • Scoop tablespoon-sized portions of the cookie dough and roll them into balls. Place them on the prepared baking sheets about 2 inches apart.
    • Gently flatten each ball into a small disc using the back of a spoon or your fingers.
  4. Make the Cheesecake Topping:
    • In a medium bowl, beat the softened cream cheese until smooth.
    • Add the sugar, egg yolk, and vanilla extract, beating until fully combined.
    • Stir in the strawberry jam (or chopped strawberries) and flour until the mixture is smooth.
  5. Assemble the Cookies:
    • Spoon about a teaspoon of the cheesecake mixture onto the center of each cookie.
    • Gently spread the topping to cover the cookie base, leaving a small border around the edges.
  6. Bake:
    • Bake for 12-15 minutes or until the cookie edges are golden and the cheesecake topping is set.
    • Let the cookies cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.

Notes

  • If using fresh strawberries, chop them finely to avoid excess moisture in the topping.
  • You can substitute strawberry jam with other fruit preserves like raspberry or blueberry for a different twist.
  • These cookies can be stored in an airtight container in the fridge for up to 3 days.
