  • 1 teaspoon vanilla extract
  • ½ cup rainbow sprinkles (or Valentine-themed sprinkles)
  • ¼ cup colored sugar (for rolling)
  • Optional: Red or pink food coloring (for a festive look)

Instructions

  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the egg and vanilla extract until fully combined. (If you want to add food coloring, add a few drops to the wet ingredients here.)
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in ¼ cup of sprinkles until evenly distributed throughout the dough.
  • Roll the dough into 1-inch balls and then roll them in the colored sugar (if using). Gently press the remaining sprinkles into the tops of each dough ball.
  • Place the cookies about 2 inches apart on the prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges are just starting to turn golden.
  • Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • If you prefer your cookies a little firmer, you can chill the dough for 30 minutes before rolling and baking.
