Ingredients
Scale
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup rainbow sprinkles (or Valentine-themed sprinkles)
- ¼ cup colored sugar (for rolling)
- Optional: Red or pink food coloring (for a festive look)
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until fully combined. (If you want to add food coloring, add a few drops to the wet ingredients here.)
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in ¼ cup of sprinkles until evenly distributed throughout the dough.
- Roll the dough into 1-inch balls and then roll them in the colored sugar (if using). Gently press the remaining sprinkles into the tops of each dough ball.
- Place the cookies about 2 inches apart on the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are just starting to turn golden.
- Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- If you prefer your cookies a little firmer, you can chill the dough for 30 minutes before rolling and baking.
- Feel free to mix and match different sprinkles or even add chocolate chips to the dough for extra flavor!
- These cookies can be stored in an airtight container for up to a week.
