Instructions

  1. Prepare the Cranberries:
    • If your cranberries are large, chop them into smaller pieces to make them easier to incorporate into the bites.
  2. Melt the White Chocolate:
    • In a microwave-safe bowl, add the white chocolate chips (and coconut oil, if using). Heat in 30-second intervals, stirring between each, until the chocolate is smooth and fully melted.
    • Stir in the vanilla extract once the chocolate is fully melted.
  3. Combine the Ingredients:
    • Gently fold the chopped cranberries into the melted white chocolate. If you’re adding nuts (pistachios or almonds), fold them in as well.
  4. Form the Bites:
    • Line a baking sheet or tray with parchment paper.
    • Use a teaspoon to scoop out the white chocolate mixture, and drop small mounds onto the prepared baking sheet.
    • Sprinkle each bite with pink or red sprinkles and crushed freeze-dried strawberries, if desired, for extra flair.
  5. Chill:
