Ingredients
Base:

1 lb ground beef

1 onion, chopped

2 cloves garlic, minced

1 tsp salt

½ tsp black pepper
Vegetables:

1 cup carrots, sliced

1 cup potatoes, diced

1 cup corn kernels

1 cup green beans, chopped
Sauce:

1 can (10.5 oz) cream of mushroom soup

1 tsp dried thyme
-
1 tsp dried parsley
-
1 cup shredded cheddar cheese
Instructions

Preheat oven to 350°F (175°C).

In a large skillet over medium heat, cook ground beef with onion and garlic until browned and cooked through. Drain excess fat. Season with salt and pepper.

In a large mixing bowl, combine cooked beef mixture, carrots, potatoes, corn, and green beans.

Stir in cream of mushroom soup, dried thyme, and dried parsley until everything is well coated.

Transfer mixture to a greased casserole dish.

Sprinkle shredded cheddar cheese evenly over the top.

Cover with foil and bake for 45 minutes. Remove foil and bake an additional 10–15 minutes until cheese is melted and bubbly and vegetables are tender.

Let stand a few minutes before serving.
Notes
You can swap cream of mushroom soup with cream of chicken or celery soup if preferred.
Add a layer of crushed crackers or breadcrumbs on top for extra crunch.
Adjust seasoning to taste.
This casserole can be prepared a day ahead and baked before serving.
