- 3 cups cooked chicken, diced or shredded
- 3 cups cooked rice
- ½ cup butter, room temperature and cubed
- 8 ounces cream cheese, room temperature and cubed
- 10.5 ounces cream of chicken soup
- 3 cloves garlic, minced
- 0.7 ounce Italian dressing mix (Good Seasons)
- 1 cup chicken stock
- 2 cups shredded Colby Jack cheese, divided use
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Prepare the Sauce: In a large bowl, combine butter, cream cheese, cream of chicken soup, garlic, Italian dressing mix, and chicken stock. Stir until smooth and well-mixed.
- Mix the Chicken & Rice: In a separate bowl, combine the cooked chicken and cooked rice.
- Combine: Pour the creamy sauce mixture over the chicken and rice, stirring until everything is evenly coated.
- Add Cheese: Fold in 1 ½ cups of shredded Colby Jack cheese into the mixture.
- Bake: Preheat your oven to 350°F (175°C). Transfer the mixture into a greased 9×13-inch baking dish. Sprinkle the remaining ½ cup of Colby Jack cheese on top.
- Bake the Dish: Bake for 25-30 minutes, or until bubbly and golden on top.
- Finish & Serve: Garnish with fresh parsley and serve warm.
Notes
- You can add vegetables like peas or spinach to this dish to add more color and flavor.
- This recipe can easily be made ahead of time and baked when needed.
- If you prefer a bit more flavor, you can increase the amount of garlic or use a different cheese like cheddar.
