700g (1.5 lb) pork tenderloin

1 tablespoon Cajun seasoning

2 tablespoons brown sugar

6 strips bacon

3 tablespoons apricot preserves

¼ teaspoon seasoned salt (or SIDS CRAZY SALT)

1 tablespoon grainy Dijon mustard
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top (optional for crispier bacon).

Season the pork:

Pat pork tenderloin dry. In a small bowl, mix Cajun seasoning, brown sugar, and seasoned salt.

Rub mixture all over the pork tenderloin.

Wrap with bacon:

Wrap bacon slices around the tenderloin, overlapping slightly. Secure with toothpicks if needed.

Prepare glaze:

In a small bowl, mix apricot preserves and Dijon mustard.
