  • 700g (1.5 lb) pork tenderloin

  • 1 tablespoon Cajun seasoning

  • 2 tablespoons brown sugar

  • 6 strips bacon

  • 3 tablespoons apricot preserves

  • ¼ teaspoon seasoned salt (or SIDS CRAZY SALT)

  • 1 tablespoon grainy Dijon mustard


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top (optional for crispier bacon).

  2. Season the pork:

    • Pat pork tenderloin dry. In a small bowl, mix Cajun seasoning, brown sugar, and seasoned salt.

    • Rub mixture all over the pork tenderloin.

  3. Wrap with bacon:

    • Wrap bacon slices around the tenderloin, overlapping slightly. Secure with toothpicks if needed.

  4. Prepare glaze:

    • In a small bowl, mix apricot preserves and Dijon mustard.

  5. Bake the pork:

    • Place bacon-wrapped tenderloin on the rack. Roast for 25–30 minutes.

  6. Glaze and finish:

    • Remove from oven, brush generously with apricot glaze, and return to oven.

    • Roast for an additional 10–15 minutes, or until internal temperature reaches 145°F (63°C) and bacon is crispy.

  7. Rest and serve:

    • Let rest for 5–10 minutes before slicing. Serve with your favorite sides.

Notes

Use a meat thermometer for perfect doneness without drying it out.

For extra glaze flavor, broil for 2–3 minutes at the end.
