1½ pounds pork tenderloin

1 tablespoon Cajun seasoning

2 tablespoons brown sugar

6 strips bacon

3 tablespoons apricot preserves

1 tablespoon grainy Dijon mustard
Instructions

Preheat oven to 400°F (200°C).

In a small bowl, combine Cajun seasoning and brown sugar. Rub this mixture evenly over the pork tenderloin.

Wrap the seasoned pork tenderloin with bacon strips, securing them with toothpicks if necessary.

Heat an oven-safe skillet over medium heat. Add the bacon-wrapped pork tenderloin and sear until browned on all sides, approximately 10–15 minutes.

Transfer the skillet to the preheated oven and roast until the internal temperature of the pork reaches 140°F (60°C), about 10–15 minutes.

While the pork is roasting, in a small saucepan, combine apricot preserves and Dijon mustard. Heat over low heat until the mixture is smooth and warmed through.

During the last 5 minutes of roasting, brush the apricot-Dijon glaze over the pork.

Remove the pork from the oven and let it rest for 5 minutes before slicing.
Notes
Ensure the pork reaches an internal temperature of 145°F (63°C) for optimal juiciness.
For added flavor, let the seasoned pork sit for 30 minutes before cooking to allow the spices to penetrate.
