Description

A succulent pork tenderloin seasoned with Cajun spices, wrapped in crispy bacon, and glazed with a sweet and tangy apricot-Dijon sauce. This dish offers a perfect balance of smoky, spicy, and sweet flavors.


Ingredients

  • 1½ pounds pork tenderloin

  • 1 tablespoon Cajun seasoning

  • 2 tablespoons brown sugar

  • 6 strips bacon

  • 3 tablespoons apricot preserves

  • 1 tablespoon grainy Dijon mustard


Instructions

  • Preheat oven to 400°F (200°C).

  • In a small bowl, combine Cajun seasoning and brown sugar. Rub this mixture evenly over the pork tenderloin.

  • Wrap the seasoned pork tenderloin with bacon strips, securing them with toothpicks if necessary.

  • Heat an oven-safe skillet over medium heat. Add the bacon-wrapped pork tenderloin and sear until browned on all sides, approximately 10–15 minutes.

  • Transfer the skillet to the preheated oven and roast until the internal temperature of the pork reaches 140°F (60°C), about 10–15 minutes.

  • While the pork is roasting, in a small saucepan, combine apricot preserves and Dijon mustard. Heat over low heat until the mixture is smooth and warmed through.

  • During the last 5 minutes of roasting, brush the apricot-Dijon glaze over the pork.

 

  • Remove the pork from the oven and let it rest for 5 minutes before slicing.

Notes

Ensure the pork reaches an internal temperature of 145°F (63°C) for optimal juiciness.

For added flavor, let the seasoned pork sit for 30 minutes before cooking to allow the spices to penetrate.
