For the Fritters:

  • ¾ cup all-purpose flour

  • ¾ cup white whole wheat flour

  • ½ cup brown sugar

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

  • ¼ teaspoon allspice

  • ¼ teaspoon salt

  • 6 tablespoons cold butter, cut into pieces

  • ½ cup milk

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 cup chopped apple

For the Glaze:

  • 1 cup confectioner’s sugar

  • 2 tablespoons milk

  • 1 teaspoon vanilla extract


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease.

  • In a large bowl, whisk together all-purpose flour, whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt.

  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  • In a separate bowl, whisk together milk, egg, and vanilla extract.

  • Add wet ingredients to dry ingredients and mix until just combined. Fold in chopped apples gently.

  • Drop batter by heaping spoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.

  • Bake for 15-18 minutes or until golden brown and a toothpick inserted into the center comes out clean.

  • While fritters bake, whisk together confectioner’s sugar, milk, and vanilla extract to make the glaze.

 

  • Drizzle glaze over warm fritters before serving.

Notes

Use tart apples like Granny Smith for a nice balance of sweetness and acidity.

These fritters can be stored in an airtight container for up to 2 days but are best eaten fresh.
