These crispy and flavorful cauliflower fritters are the perfect combination of healthy and delicious. Lightly seasoned with lemon zest, garlic, and fresh herbs, they make a wonderful snack or side dish. Served with a refreshing dollop of tzatziki and a sprinkle of fresh dill, they’re sure to impress!
Ingredients
Cauliflower Fritters:

1 small cauliflower (chopped into small florets, about 350g or 12.3 oz)

½ tsp salt

½ tsp pepper

Zest of 1 lemon

Small bunch fresh parsley (chopped)

Small bunch chives (chopped)

60g (1/2 cup) plain (all-purpose) flour

1 clove garlic (peeled and minced)

50g (1/2 cup) grated parmesan cheese (use Italian-style vegetarian hard cheese for a vegetarian version)

1 medium egg

3 tbsp olive oil
To Serve:

Tzatziki

A few sprigs of fresh dill
Instructions

Begin by chopping the cauliflower into small florets. Steam or boil until tender, about 5–7 minutes. Drain and let cool for a few minutes before chopping into small pieces.

In a mixing bowl, combine the cauliflower, salt, pepper, lemon zest, parsley, chives, flour, garlic, parmesan cheese, and egg. Mix until well combined.

Heat olive oil in a large frying pan over medium heat. Drop spoonfuls of the cauliflower mixture into the pan, pressing them down slightly to form fritters.

Cook for 3-4 minutes on each side or until golden and crispy.

Remove the fritters from the pan and drain on a paper towel.

Serve with tzatziki and a sprinkle of fresh dill.
Notes
You can use gluten-free flour if you want to make this recipe gluten-free.
If you want a bit more crunch, you can add a little panko breadcrumbs to the mixture.
For extra flavor, feel free to add some chili flakes or a bit of smoked paprika.
