Juicy, smoky, and full of bold flavor, these BBQ chicken skewers are marinated in a savory-sweet blend of beer, honey, garlic, and spices. Perfect for grilling season, they’re easy to prep and make a flavorful centerpiece for any summer cookout.

Chicken

  • pounds boneless, skinless chicken breasts, cut into -inch cubes

Marinade

  • ¾ cup beer (lager or ale)

  • ⅓ cup honey

  • ¼ cup low-sodium soy sauce

  • 1 tbsp olive oil

  • 1 tsp Dijon mustard

  • 1 tsp red pepper flakes

  • 3 cloves garlic, minced

Garnish

  • 2 tbsp fresh cilantro, chopped


Instructions

  • Make the Marinade

    • In a bowl, whisk together beer, honey, soy sauce, olive oil, Dijon mustard, red pepper flakes, and garlic.

  • Marinate the Chicken

    • Place chicken cubes in a resealable bag or shallow container. Pour marinade over the chicken.

    • Seal and refrigerate for at least 1 hour, or up to 8 hours for deeper flavor.

  • Skewer and Grill

    • Thread marinated chicken onto skewers (if wooden, soak in water 30 minutes beforehand).

    • Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred. Internal temperature should reach 165°F (74°C).

 

  • Garnish and Serve

    • Remove from grill and sprinkle with fresh chopped cilantro. Serve immediately.

Notes

Best beer to use: Light lagers, wheat beers, or pale ales work best.

Serving ideas: Pair with grilled veggies, rice, or a crisp summer salad.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
