Ingredients

1 lb ground beef

5 medium potatoes, peeled and diced

1 small onion, diced

2 cloves garlic, minced

3 cups beef broth

1 cup heavy cream

1 cup shredded cheddar cheese

2 tablespoons butter

Salt and pepper, to taste

Fresh chives, chopped (for garnish)
Instructions

Brown Beef:
In a large pot over medium heat, cook the ground beef until browned. Drain excess fat and set beef aside. -
Sauté Veggies:
In the same pot, melt butter. Add diced onion and garlic and sauté until translucent and fragrant (about 3-4 minutes). -
Add Potatoes and Broth:
Stir in diced potatoes and beef broth. Bring to a boil, then reduce heat to simmer. Cook until potatoes are tender, about 15-20 minutes. -
Combine Ingredients:
Return browned beef to the pot. Stir in heavy cream and cheddar cheese. Cook on low until cheese is melted and soup is heated through.

Season & Serve:
Add salt and pepper to taste. Garnish with fresh chopped chives before serving.
Notes
Use sharp cheddar for extra flavor.
Leftovers store well in the fridge for 3 days.
For a thicker soup, mash some of the potatoes while cooking or add a tablespoon of flour or cornstarch.
