Description

Golden, crispy roasted baby potatoes tossed in flavorful ranch seasoning and topped with melted cheese, fresh herbs, and an optional drizzle of hot sauce for a tasty side dish everyone will love!


Ingredients

  • lbs baby Dutch yellow potatoes, cut into small pieces

  • 1 tablespoon olive oil

  • 12 tablespoons ranch seasoning (adjust to taste)

  • Pinch of cayenne pepper

  • ½ cup shredded cheese (e.g., Trader Joe’s 3 cheese blend)

  • ½ tablespoon chopped cilantro or sliced chives (optional, for topping)

  • Drizzle of hot sauce (optional, for topping)


Instructions

  • Preheat oven to 400°F (200°C).

  • In a large bowl, toss the cut potatoes with olive oil, ranch seasoning, and cayenne until evenly coated.

  • Spread potatoes in a single layer on a baking sheet lined with parchment paper or foil.

  • Roast for 25–30 minutes, stirring halfway through, until potatoes are golden and crispy.

  • Remove from oven, sprinkle shredded cheese evenly over the potatoes, and return to oven for 3–5 minutes until cheese melts.

 

  • Garnish with chopped cilantro or chives and drizzle with hot sauce if desired. Serve hot.

Notes

Adjust ranch seasoning according to your preferred level of flavor.
