Ingredients

1½ lbs baby Dutch yellow potatoes, cut into small pieces

1 tablespoon olive oil

1–2 tablespoons ranch seasoning (adjust to taste)

Pinch of cayenne pepper

½ cup shredded cheese (e.g., Trader Joe’s 3 cheese blend)

½ tablespoon chopped cilantro or sliced chives (optional, for topping)

Drizzle of hot sauce (optional, for topping)
Instructions

Preheat oven to 400°F (200°C).

In a large bowl, toss the cut potatoes with olive oil, ranch seasoning, and cayenne until evenly coated.

Spread potatoes in a single layer on a baking sheet lined with parchment paper or foil.

Roast for 25–30 minutes, stirring halfway through, until potatoes are golden and crispy.

Remove from oven, sprinkle shredded cheese evenly over the potatoes, and return to oven for 3–5 minutes until cheese melts.

Garnish with chopped cilantro or chives and drizzle with hot sauce if desired. Serve hot.
Notes
Adjust ranch seasoning according to your preferred level of flavor.
