Description

Chicken Alfredo Lasagna Rolls are a delicious and unique twist on traditional lasagna. Tender lasagna noodles are filled with a creamy chicken Alfredo mixture, then rolled up and baked with cheese for a comforting, cheesy, and flavorful meal.

  • 12 lasagna noodles, cooked and cooled
  • 2 cups cooked chicken, shredded
  • 1 jar (15 oz) Alfredo sauce
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

 

  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Noodles: Cook the lasagna noodles according to the package instructions. Once cooked, drain and set aside to cool.
  • Make the Filling: In a large bowl, combine the shredded chicken, ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, and Italian seasoning. Mix until well combined.
  • Assemble the Rolls: Preheat your oven to 375°F (190°C). Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish. Take each lasagna noodle and spread a generous amount of the chicken filling along the noodle, then roll it up. Place the rolled-up noodles seam-side down in the baking dish.
  • Top with Alfredo Sauce and Cheese: Once all the rolls are in the baking dish, pour the remaining Alfredo sauce over the top. Sprinkle the remaining 1/2 cup of mozzarella cheese evenly on top of the rolls.
  • Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown.

 

  • Serve: Garnish with fresh chopped parsley and serve hot.

Notes

  • You can make this dish ahead of time and refrigerate it until you’re ready to bake. Just add a few extra minutes to the baking time if baking from the fridge.
  • Add sautéed spinach or mushrooms to the filling for extra flavor and texture.

 

  • For a lighter version, substitute the ricotta with part-skim ricotta and use a light Alfredo sauce.
