  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 1/2 cup lettuce, shredded
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup sliced avocado
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  • Preheat your grill or grill pan over medium-high heat.
  • Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill the chicken for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  • While the chicken is cooking, prepare the burrito fillings. Warm the tortillas on a dry skillet or in the microwave for about 10-15 seconds to make them pliable.
  • Once the chicken is done, let it rest for a few minutes before slicing it thinly.
  • Lay a tortilla flat on a clean surface. In the center, layer the rice, black beans, grilled chicken, shredded cheese, lettuce, diced tomatoes, red onion, and avocado.
  • Drizzle chipotle ranch dressing over the top, then fold in the sides of the tortilla and roll it tightly to form the burrito.
  • Optional: For extra flavor, grill the burrito for 1-2 minutes on each side to crisp the tortilla.
  • Slice the burrito in half, garnish with fresh cilantro, and serve.

  • You can swap out the rice for quinoa or even cauliflower rice for a low-carb version.
