Instructions
- Preheat your grill or grill pan over medium-high heat.
- Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill the chicken for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- While the chicken is cooking, prepare the burrito fillings. Warm the tortillas on a dry skillet or in the microwave for about 10-15 seconds to make them pliable.
- Once the chicken is done, let it rest for a few minutes before slicing it thinly.
- Lay a tortilla flat on a clean surface. In the center, layer the rice, black beans, grilled chicken, shredded cheese, lettuce, diced tomatoes, red onion, and avocado.
- Drizzle chipotle ranch dressing over the top, then fold in the sides of the tortilla and roll it tightly to form the burrito.
