Corn

  • 4 ears corn, husks and silks removed

  • 1 cup crumbled feta cheese or cotija cheese

  • ½ cup fresh cilantro, chopped

  • 1 small lime

  • ¼ teaspoon chili powder (to taste)

Chicken

  • 1.5 lb skinless, boneless chicken thighs

  • 1 teaspoon chili powder

  • ¼ teaspoon salt (to taste)

  • 2 tablespoons olive oil

  • 2 tablespoons butter


Instructions

  1. Prepare the corn: Grill or roast the ears of corn until tender and slightly charred. Cut the kernels off the cob and place them in a bowl.

  2. Mix the corn topping: Add crumbled feta or cotija cheese, chopped cilantro, a squeeze of lime juice, and chili powder to the corn. Toss to combine and set aside.

  3. Season the chicken: Rub chicken thighs with chili powder and salt.

  4. Cook the chicken: Heat olive oil and butter in a skillet over medium-high heat. Add chicken and cook 5–7 minutes per side until cooked through and golden brown.

  5. Serve: Plate the chicken with a generous scoop of the cilantro-lime corn mixture on the side. Garnish with extra cilantro or lime wedges if desired.

Notes

You can cook the corn indoors by sautéing the kernels in a pan if a grill is unavailable.

For more heat, increase the chili powder or add a dash of cayenne.

Use fresh lime juice for the best brightness.
